I have created my first soundfont but it sounds "phasey", am I doing something wrong?

Hi all! I'm new to Polyphone and the soundfonts world in general. I've already made my first two soundfonts (an acoustic piano and a rock organ as .sf2 extensions). The samples are in stereo and .wav 24-bit format. I made them by recording my keyboard through Reaper. I already managed to set them up and running but the problem is that they sound a bit phasey and a bit flat to me, even when I double checked and the samples are properly treated as stereo samples in Polyphone.
When I say "phasey" I mean like a cancellation and when I say flat, I mean like if it was lacking some low and high end.
I'm using JuicySF as a VST in Reaper.

Maybe there's something really obvious that I'm missing. Can anybody shed some light?
Thanks in advance and thanks to the Polyphone team as well for such a cool software!
