Is there actually a way to add randomness (variations in pitch, filter cutoff, release times, etc.) to an instrument, possibly via a parameter inside the instrument or a modulator? That would make a soundfont so realistic, it would feel like a live recording. Well, this may seem to be a stupid question, since I haven't found a way to add randomness to a soundfont

you can, using Velocity layers. you can create multiple versions of an Instrument and trigger them using Velocity parameters.
